When you start to prepare your consumables for your trip, you may find that your menu isn’t very appetizing. Unfortunately, the easiest meals to pack tend to be dehydrated and bland. Personally, I tend to get tired of beef jerky, dried fruit, and trail mix on the drive out because I can never seem to refrain from breaking into my snacks a little too early. This blog will be the first of many in a series in which I’ll outline some quick, easy, and mouth watering recipes for your next trip.
For most of my adventures, I end up arriving in the late afternoon to setup so my first meal at my new camp site is dinner. Maybe I’m being dramatic, but in my opinion this is possibly one of the most important meals because it sets the tone for your trip. I tend to start my work days early to sneak in a full day before my trip so by the time I arrive and then set up camp I am famished and exhausted. The last thing I typically want to do is start cooking which is why it has been so important for me to devise some simple and tasty recipes to indulge in on my trips.

I’m going to share with you one of the easiest and one of my favorite recipes – sausage stuffed pitas. The total prep time for this meal is about 15 min. To prepare this meal for 2 you will need:
- A heat source – preferably a camping stove but a fire pit with a grate will work if you are comfortable with this
- A pan
- A utensil for stirring – I tend to use a wooden spoon
- A kitchen knife
- A cutting board
- Olive oil for the pan
- 1/2 onion
- 1/2 bell pepper
- 1 pack of sausage – my favorite brand is Aidell’s
- 1 package of tzatziki sauce (you can typically find this by the hummus and salsa in grocery stores)
- Salt, pepper, and oregano for taste
- 1 pack of pitas
Start by putting some oil in your pan and bringing it to medium to high heat. If you’re using the fire pit, be aware that the flame can be unpredictable and watch your pan accordingly. While your oil is heating up, cut your sausages into thin ~0.5 inch thick slices and dice up your bell pepper and onion. Once the pan is hot, throw your sausage in for about 2-3 min and then throw the peppers and onions in. Add your spices to the mix and cook until the vegetables are soft and are beginning to brown on the edges. Once your sausage and veggie mix is near done, cut your pitas in half to prepare to serve. This is a personal preference, but I like to heat my pitas up over the heat for about a minute on each side prior to serving. Once everything is hot and ready, stuff your pita halves with your sausage and veggie mix, top with tzatziki, and serve!
